cheese stick



Ingredients:
·         1 no egg yolk
·         15 ml whole milk
·         1 pct puff pastry
·         43 gm grated parmesan cheese
·         As needed paprika
·         25 gm black sesame seed
Procedure
1)      Roll out the puff pastry.
2)      Whisk together egg yolk and milk to make an egg wash. brush the puff pastry sheet with the egg wash.
3)      Sprinkle the cheese, paprika and sesame evenly over the puff pastry sheet. Cut the sheet lenghthwise into 6 mm strip. the sticks may be twisted or curled.
4)      Baked on parchment lined sheet pans at 204 c until golden brown, about 10 minutes.

chicken burger


Ingredients
·         12 gm minced shallot
·         12 gm vegetable oil
·         272 gm minced white mushroom
·         36 ml sparkling juice
·         As needed salt
·         To taste ground black pepper
·         450 g ground chicken
·         45 g bread crumb
·         As needed chopped herbs ( chives, oregano, basil )
·         As needed chopped rosemary
·         4 slices cheddar cheese
·         4 no burger bun
·         As needed tomato ketchup
Procedure
1.      Sauté the minced shallot and add mushrooms, sauté until all the moisture has cooked off. Add sparkling juice and continue sauté until dry.
2.      Season with salt and pepper, remove from heat and chill thoroughly.
3.      Combine the chicken with bread crumb, mushroom mixture, herbs, salt and pepper.
4.      Make a test for forcemeat. Adjust seasoning if necessary.
5.      Form the chicken mixture into patties, about 125 gm each or into 4 patties.
6.      Sauté or griddle the patties until browned on both side.
7.      Transfer to a sheet pan, and top each patty with a slice of cheese. Finish cooking the patties in a medium oven (177 C-191 C )
Sandwich assembly:
For each sandwich, place a patty on a bun, top with tomato and serve
